
Henry Herbert
A graduate from Westminster Catering College and a 5th generation baker, Henry is passionate about carefully sourced, good quality seasonal ingredients.
As Head Chef of Clerkenwell's award winning pub, The Coach & Horses, Henry's chooses small suppliers with whom he can develop a personal relationship, but also forages for wild ingredients in and around London - crab apples from his favourite tree at the Oval, blackberries from Hampstead Heath and mushrooms from Epping Forest have all made it into his kitchen over the last couple of weeks.
The Victorian hostelry, originally an ale house and bear pit, (est. 1855) has soared in popularity since re-opening in 2003, and has become renowned for its food.
Owners Giles and Colette Webster said, "When Henry worked here as a student, his enthusiasm and talent delighted us and our customers. He returns with the experience and maturity to produce food we're immensely proud of."
This year Henry took place in the Great British Menu, which broadcast in April.
